It is up to you to determine which items are appropriate for Self Service.
To make a configuration profile, app, or book available in Self Service, choose from the Distribution Method pop-up menu when configuring it in Jamf Pro.

Upload an icon | You can upload an icon to display for the item. It is recommended that you use a file with the GIF or PNG format that is 512 x 512 pixels. In environments that have the Cloud Services connection enabled, your Self Service instance is automatically connected to the Icon Service, and new Self Service icons uploaded to Self Service are stored in the cloud-based Icon Service rather than in your database. This results in improved database performance and reduced memory usage. If you have an on-premise environment, you must safelist the following URLs:
